Juice of sugar cane is a syrup extracted from a pressed cane. "Juice" is misleading as this is not a fruit or vegetable juice. It is consumed as a drink in many places, especially where sugar cane is grown commercially such as Southeast Asia, Indian Subcontinent, Egypt, and Latin America. Sugar cane juice evaporated, as a prepared food, is a misleading way of saying "sugar".

Health risks
Raw cane juice can be a health risk for drinkers due to unhygienic conditions underneath. There are several diseases that can be transmitted by raw sugarcane, such as leptospirosis. In Brazil, cane juice has been associated with cases of Chagas disease, because cane can contain traces of responsible pathogens, Trypanosoma cruzi , left by infected insects if not properly cleaned.

The evaporated cane juice is a misleading term for "sugar". Sugar can contain glucose or fructose. Sugar is partially purified sugar syrup, produced from a single crystallization process during sugar cane milling.
The US Food and Drug Administration (FDA) defines cane juice that evaporates as any sweetener derived from cane syrup. The US FDA considers the term "cane juice evaporate" to be misleading because the term improperly indicates that it is juice, when it is a sugar syrup. Instead, the US FDA recommends using "cane sugar syrup" or "dry cane syrup" on the food label.
